[RECIPE] : Roasted Parmesan Zucchini

Parm Zucchini


  • 2 Zucchini
  • 1 TBSP olive oil
  • 1 tsp minced garlic
  • 1/4 cup Parmesan cheese
  • Salt & pepper

1. Preheat oven to 425 F

2. Cut zucchini in eighths, roll in paper towel to remove moisture.

3. Rub garlic, oil and Parmesan into zucchini, place peel side down on parchment lined baking sheet.

4. Sprinkle with salt and pepper.

5. Bake for 15 minutes, then turn oven to broil and broil for 4 minutes or until brown.

6. Serve warm, dipped in marinara!
